Experience: An apprenticeship at the Peninsula Hotel in Hong Kong at age 14 set the stage for many future culinary feats in Toronto. In 1987, Lee opened Lotus as chef/owner. In 1997, Lee closed Lotus to head to Singapore for the head chef job at Club Chinoise. In 2000, he returned to Toronto to open Susur, and later, in 2004, opened Lee, a chic restaurant featuring tapas-style small plate
Chef Thomas Chai is the Executive Chef of award-winning Jade Restaurant located in the historic and grand Fullerton Hotel in Singapore. He mentored closely under celebrity chef Sam Leong, who is himself award-winning and is the Director of Kitchens of the Tung Luk Group
Chef Thomas Chai is the young and dynamic force behind Jade, the elegant modern Chinese restaurant. He brings with him a firm culinary foundation and a passion for creativity. He is instrumental in introducing new and vibrant dishes to the menu, constantly thrilling guests with his masterpieces.
Thomas has a wealth of experience, having participated in numerous international gourmet events such as 21st America Food & Wine Festival, Los Angeles, USA 2003; Masters of Australian Food and Wine 2002; and St. Moritz Gourmet Festival in Switzerland 2002.
He has also been awarded a Gold Distinction Award in the 4th World Championship of Chinese Cuisine, Malaysia 2002; been nominated for the award of Heinz Asian Ethnic Chef of the Year, by World Gourmet Summit Singapore 2005; and received nominations for the award of Rising Chef of the Year, by World Gourmet Summit Singapore in 2004 and 2005

其实我比较威因为我跟过他们,哈哈。。。(作大)
没有啦。。。上面两个名厨已经是国际化了的,我哪有那么幸运跟过他们呢?
但我做的两间餐馆都有他们他们的影子哦。。。。
我跟过的是第三哪个名厨thomas chai ,我还蛮感激他的,他教了我许多东西,而且他人也超好,很关心自己的手下,很难找到这样的一个好总厨。。。。
但我现在没跟他了,我现在跟新的一位总厨了,这新总厨的厨艺很好,而且他的菜色有很多小装饰,颜色方面都很特出,在新加坡也蛮有名的哦,所以我要好好地把握机会才行。。。
